Amory’s Tomb Wax Galaxies

As I mentioned in my article on Monday I am trying to work in some more curbside pick-ups at local breweries in the coming months. As much as I miss sitting at a taproom bar with a pint or a flight, and I hope to do it again soon, it has been nice to order a selection of beer online and have someone bring it out to your car. It is hard to decide which breweries to visit, I only have so much time and I am trying to not drink too much in quarantine, so I am trying to focus on my favorite local places, the places that I would really hate to see shut down (and you know there is going to be some COVID-related attrition). Despite being a relatively new addition to the local brewing scene, Amory’s Tomb is absolutely in the conversation as one of my favorite local breweries. For one, it is the closest brewery to my house (which absolutely matters) and, much more importantly, I’ve really enjoyed all of their beers that I’ve tried. I am a huge saison fan, and that is definitely one of Amory’s Tomb’s specialties. On my recent visit I got a variety of beers including Wax Galaxies, a saison/IPA crossover heavily hopped with Motueka and Wai-Iti hops. Amory’s Tomb Wax Galaxies is available on a rotating basis on draft and in 16 oz cans.

Amory’s Tomb Wax Galaxies pours slightly hazy straw yellow with a solid white head. The aroma features a mixture of fruity Belgian-style yeast and citrusy hops. The flavor is really complex, but all of the pieces work well together. The yeast adds notes of apricot, peppercorn and bubblegum. The hops contribute touches of orange, melon and peach along with just a little late bitter bite. The malts round out the flavor and add some body along with hints of cereal and bread crust. Wax Galaxies is light and easy-drinking, not too boozy at 5.5% ABV. The finish is crisp and dry with just a little lingering hops and yeast flavor. This is an excellent hoppy saison, just the right mix of all of the ingredients. Amory’s Tomb continues to make lots of excellent beer, check them out when you get a chance!
